Roasted artichokes

Cappelletti

Great roasted artichokes, accompanied by a well-balanced trout menier mayo. Delicious cappelletti with roasted pumpkin and chestnuts, coated in a rich brown stock. Excellent bites of lechal, glazed in their own reduction — bold, concentrated, much more intense than your typical lechal.

The croqueta, far from the classic béchamel and jamón version, worked beautifully: dry, crispy outside, rich stewed beef filling inside.

But the dish — the dish — was the albóndiga. A game meatball wrapped in a deeply savory nest of potatoes, trumpet mushrooms, its own reduction, and shaved black truffle.

Mind-blowing. Period.

The house-made cured buey tongue, thinly sliced with smoked paprika, was good but not outstanding.
Same goes for an appetizer with a gilda where the anchovy got a bit lost, two slices of pork shoulder, and a crostino topped with a gelatinous wild boar tartlet and a touch of mayo.

The torrija didn’t work for me at all.
It felt like poorly whipped egg whites — a mush that just didn’t make sense.
I’m not a dessert person (yes, I know, controversial), and this didn’t change my mind.
Luckily, we paired it with a glass of sweet Málaga wine from Victoria Ordóñez — perfect to reset the palate.

Overall: 4.5/5.

Service was fast. Too fast.
Great food. Timing, not so much.
A bit chaotic, with multiple waiters and very little breathing room between courses.
And then… the bill took forever.

You can see the care in the plating, and a clear intent to highlight local products — especially meat.

The wine list is also worth noting.
We stayed in Castilla y León with a 2017 Syrah from Bodega Comino — a great call. Once it opened up, it paired beautifully with the meat: powerful, balanced, low in tannins, with just the right acidity.

Thin-stemmed Spiegelau glasses, a well-executed mise en place, all consistent with the space.

Almost Michelin-star pricing. Not quite Michelin yet.
